These Pumpkin Gnocchi with Burrata and Black Modena Pearls​ are a culinary masterpiece that marries the earthy flavors of pumpkin with the luxurious creaminess of burrata, all accented by the delightful burst of our Black Modena Pearls


Ingredients for 4 People

  • 12.5 oz can pumpkin puree​
  • 1 ½ cups white flour​
  • 1 egg (optional)​
  • Burrata cheese, to taste​
  • De Nigris Black Modena Pearls, to taste​
  • De Nigris Balsamic Vinegar – Golden Eagle (optional)​

For the recipe

Pour the pumpkinpuree into a bowl, add flour and the egg (optional). Mix well until the dough is soft and smooth, then divide the dough into six parts.
Form small cylinders and stretch them until they have acquired the diameter you prefer.
Cut the cylinders with a sharp knife and shape your dumplings.
Blanch the gnocchi for about 5 minutes in salted boiling water, until they have risen to thesurface.
Meanwhile, heat a knob of butter in a pan with rosemary.(if you want you can add a spoon or two of De Nigris Balsamic Vinegar – Golden Eagle ideal for hot dishes, to give a more intense flavor and a perfect caramelization.)
Once they are cooked, sauté the gnocchi in a pan with butter for a few minutes.
Place the gnocchi in a plate and add fresh burrata and De Nigris Black Modena Pearls.

Pearls will be an ideal touch to create a surprise effect with an enveloping, sweet, and slightly sour flavor that goes perfectly with the Autumn flavor of pumpkin and the freshness of the burrata.
