The De Nigris Recipe

De Nigris 1889, a recognized Historic Brand, produces a Balsamic Vinegar of Modena PGI made following a unique recipe perfected over the years by our family; a product that embodies tradition, innovation, and sustainability.

We call it the “De Nigris Recipe.” The De Nigris Recipe is a process that accompanies the entire product supply chain, extending even to the consumption stage. Through this new production method, we aim to tell a story of Excellence in Made in Italy, represented by a product that is a symbol of Italian gastronomic heritage, interpreted through our own vision.

We use 100% Italian raw materials, including wine vinegar certified through an Exclusive Ethical and Sustainable Supply Chain involving Coldiretti farmers, and grape must pressed within 48 hours of harvest, then cooked and concentrated “fresh,” thanks to a controlled process carried out over a few days. This method avoids the need to add sulfur dioxide (sulfites) to artificially block uncontrolled fermentations, allowing us to guarantee a sulfite-free claim.

Finally, our packaging provides a clear explanation of all attributes that characterize each product—taste, density, and sweet-sour balance—along with suggestions for the ideal pairing.
