Ingredients for 3 People

  • For the salad:​
  • 4 carrots
  • 10.5 oz (about 2 cups) cherry tomatoes
  • 0.7 oz (2 tbsp) pine nuts
  • 7 oz feta cheese
  • A few sprigs of fresh dill
  • 1 Granny Smith apple
  • Juice of ½ lemon
  • For the dressing:​
  • 3 tbsp extra virgin olive oil
  • 3 tablespoons Balsamic Vinegar of Modena PGI Tangy Flavor
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the recipe

Peel and shave 4 carrots, slice 10.5 oz of cherry tomatoes, and combine in a bowl. Season with 3 tbsp olive oil, salt, and pepper. Thinly slice 1 Granny Smith apple, drizzle with lemon juice, and add to the mix.

Toast 2 tbsp pine nuts until golden, then toss into the salad. Top with 7 oz crumbled feta and chopped dill. Finish with 3 tbsp Balsamic Vinegar of Modena PGI Tangy Flavor and serve immediately.
