Ingredients for 2 People

  • 1 ½ cup Carnaroli rice
  • 4 ¼ Vegetable Broth [or Water]
  • ½ cup Parmigiano Reggiano
  • 6 ½ tbsp Butter
  • Salt, to taste
  • ¼ cup white wine
  • 4 tbsp shallots
  • De Nigris 12 Travasi Balsamic Condiment

Parmesan Risotto with Balsamic Vinegar

In a large and low pan, sauté the chopped shallot with ¼ cup of butter for three minutes over low heat.
Add rice and toast for about two minutes over medium heat.
Sprinkle with wine and allow to evaporate.
Sprinkle several times with boiling broth and cook for about 14 minutes.
Turn off and stir in the remaining butter and Parmesan cheese.
Spread on four hot plates and top with the De Nigris 12 Travasi Balsamic Condiment in small drops on the risotto.
