Fresh veggies in the form of bright green broccoli and spinach, and red onions, vivid blueberries, and that beautiful red hue of dried cranberries means that this salad is practically all the best colors from the Crayola crayon box we all had as kids. Let’s make it even more delicious with the crunch of glazed walnuts. And my favorite honey balsamic vinaigrette brings it all together! This is one you will crave all year long

Ingredients for 4 People

  • For the salad:
  • 4 cups fresh baby spinach
  • 1 head broccoli florets, chopped
  • ½ cup glazed walnuts
  • ½ cup dried cranberries
  • ½ cup blueberries
  • ¼ cup diced red onions
  • ½ cup goat cheese, crumbled
  • For the dressing:
  • 2 tbs De Nigris Balsamic Vinegar
  • 2 tbs extra virgin olive oil
  • 1 tbs honey

For the recipe

Boil the broccoli. In a bowl add spinach, broccoli, walnuts, cranberries, blueberries, onions and goat cheese, mix. Prepare the dressing by adding De Nigris Balsamic Vinegar, oil and honey in a small bowl, mix. Pour the dressing on the salad, mix well. Serve and enjoy!
