Our grapes come from the “Coldiretti” ethical and sustainable supply chain, guaranteeing high quality, traceability and fair earning for farmers.
We select only high quality musts and each variety is separately “pressed” within 48 hours from harvesting.
From pressing to cooking, the must is processed in a short time and at a controlled temperature. This allows us to process the grape must fresh, without the need to add sulphur dioxide (SULPHITES) to inhibit uncontrolled fermentation and achieve the correct density and optimal color in a natural way, without adding caramel.
We blend the grape must, coming from 7 grape varieties, in our casks of fine wood. This allows us to obtain the blend that is most organoleptically suited to the various types of Balsamic Vinegar, with their different densities and uses, and maintain it over time.
