Our Platinum Balsamic Vinegar of Modena PGI is crafted with a high percentage of grape must, giving it a rich, syrupy texture and naturally sweet, full-bodied flavor. Its bold, complex taste reveals deep notes of cooked grapes and a long, elegant finish.
Perfect as a final touch, it pairs beautifully with gourmet preparations—aged cheeses,risottos, grilled meats, strawberries, or even vanilla gelato—adding depth and refinement to your gourmet dishes.

With a medium density and a fragrant, well-balanced profile, our Gold Balsamic Vinegar of Modena PGI delivers a rounded flavor with notes of ripe fruit and a gentle sweetness. Its smooth, with a velvety texture makes it ideal for hot dishes—braised meats, grilled seafood, and hot preparations are elevated with just a few drops.

With a medium-light density and a higher proportion of wine vinegar to grape must, our Silver Balsamic Vinegar of Modena PGI is vibrant and pleasantly tangy. Its fresh, slightly sharp character is softened by delicate fruity notes—like hints of apricot—and a smooth, rounded finish. Ideal for cold dishes such as salads, marinades, grilled vegetables or a classic caprese, where its brightness enhances the raw freshness of the ingredients.

Our White Balsamic Vinegar of Modena PGI has zesty and sour flavor, offering a light density and a perfect balance between sweetness and acidity, with a pleasantly fresh character and a slight inclination toward tanginess. It has a more pungent taste, and we recommend it in everyday dishes, such as salads or grilled vegetables — using it as a condiment to add that strong note to the dish.

A story which began more than 135 years ago, when Armando De Nigris opened the first vinegar mill in Naples, immediately proving to be a great success with his clients.
This success was consolidated over the years to follow, when the running of the company passed to his son Marcello, who succeeded in launching De Nigris’s products onto the international market and in widening the product range to include the prestigious Balsamic vinegar.
A spirit of innovation that, thanks to the third generation of Master Vinegar Makers, still guides us today and allows us to offer our clients products of excellence, which are appreciated world-wide for their quality and creativity.

Producing artisan quality balsamic vinegar, on such a grand scale, is only possible by paying the utmost attention to every stage of the production process. This is a source of great pride to De Nigris, because we directly control everything that goes into making our famous Balsamic Vinegar of Modena: from grape to bottle. We carefully grow and select various varieties of grape, which we then press and process in our plants.
