Choose the Perfect Variety of De Nigris Balsamic Vinegar of Modena

There is only one Balsamic Vinegar of Modena—but it comes in many varieties of density and flavor, each crafted to complement different dishes in unique ways.

How do you choose the perfect balsamic for your dish?
It’s simple. The golden rule is to select the variety that creates the right balance with your ingredients—enhancing, not overpowering, the individual flavors.

At De Nigris, we make that choice easier by offering a clear and intuitive system:
Each bottle displays a drop scale on the label. These drops indicate the density of the vinegar, which is determined by the amount of grape must (the cooked flesh and skins of the grapes) used in its production. The more drops you see, the richer and more syrupy the texture—and the sweeter and more complex the flavor.

To further educate and guide our consumers, we’ve created the De Nigris Classification, a simple tool that matches each density level with a suggested type of dish:

  • Cold dishes → lighter densities: perfect for salads, raw vegetables, fresh cheeses

  • Hot dishes → medium densities: ideal for risottos, grilled meats, or warm vegetable dishes

  • Gourmet dishes → high densities: best for finishing refined recipes, aged cheeses, or desserts

This classification is a compass, not a rulebook. It is designed to be used when the vinegar is added raw, as a final touch or finishing condiment.
